INGREDIENTS
1 cup cherry tomatoes
1 cup fresh mozzarella pearls
Fresh basil leaves
Olive Basin Traditional 18-Year Dark Balsamic
Olive Basin Basil Olive Oil (optional but delicious)
Salt & black pepper
INSTRUCTIONS
1. Thread one tomato, one basil leaf, and one mozzarella pearl onto small skewers or toothpicks.
2. Arrange skewers on a platter.
3. Drizzle lightly with Basil Olive Oil (optional).
4. Finish with a generous drizzle of Traditional 18-Year Balsamic.
5. Sprinkle with salt and pepper.
6. Serve immediately.

Balsamic Glazed Chicken with Roasted Tomatoes
Juicy pan-seared chicken simmered in a rich, syrupy Traditional 18-Year Balsamic sauce with garlic and blistered tomatoes. Elegant enough for guests, simple enough for weeknights.
INGREDIENTS
4 boneless skinless chicken breasts
2 Tbsp Olive Basin Garlic Olive Oil (or Tuscan Herb Olive Oil)
½ cup Olive Basin Traditional 18-Year Dark Balsamic
1 cup cherry tomatoes
2 cloves garlic, minced
½ cup chicken broth
1 tsp Italian seasoning
Salt & pepper
INSTRUCTIONS
1. Season chicken: Sprinkle chicken with salt, pepper, and Italian seasoning.
2. Sear: Heat Garlic or Tuscan Herb Olive Oil in a skillet over medium-high heat. Add chicken and cook 4–5 minutes per side until golden.
3. Add garlic: Stir in minced garlic and cook 1 minute.
4. Add liquids: Pour in the balsamic and chicken broth. Stir to scrape up browned bits.
5. Add tomatoes: Toss in cherry tomatoes.
6. Simmer: Reduce heat and cook 8–10 minutes until sauce thickens into a glossy glaze and tomatoes blister.
7. Serve: Spoon balsamic glaze over the chicken and tomatoes.
8. Best with: mashed potatoes, rice, or roasted vegetables.
