Chow Chow Egg Salad

A bright, tangy twist on classic egg salad. The sweet-and-sour crunch of Lancaster-style Chow Chow adds flavor, texture, and color—perfect for sandwiches, wraps, crostini, or as a quick lunch.

INGREDIENTS

6 hard-boiled eggs, chopped
¼ cup mayonnaise
2–3 Tbsp Chow Chow (drained of excess brine)
1 tsp Dijon mustard (optional but recommended)
Salt & black pepper, to taste
Paprika or chives for garnish (optional)
Bread, croissants, wraps, or crackers for serving

INSTRUCTIONS

1. Prep the base: In a medium bowl, combine the mayonnaise, Dijon mustard, salt, and pepper.

2. Add eggs & Chow Chow: Fold in the chopped eggs and Chow Chow until evenly distributed.

3. Adjust seasoning: Taste and add extra salt, pepper, or Chow Chow to your liking.

4. Serve: Spread on your favorite bread, spoon onto crostini, or enjoy with crackers.

5. Garnish with paprika or chives if desired.

Chow Chow Pulled Pork Sandwiches

Tender pulled pork piled high on a toasted bun and topped with sweet-tangy Chow Chow for the perfect balance of savory, smoky, and bright. A true Lancaster-style comfort meal!

INGREDIENTS For the Pork

2–3 lbs pork shoulder or pork butt
1 cup barbecue sauce (your favorite)
½ cup chicken broth
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
Salt & pepper

For Assembly

Chow Chow
Soft sandwich buns
Extra barbecue sauce

INSTRUCTIONS

1. Cook the pork: Place pork shoulder in a slow cooker. Season with garlic powder, onion powder, paprika, salt, and pepper.

2. Add the chicken broth and ½ cup barbecue sauce.

3. Slow cook: Cook on LOW for 8 hours or HIGH for 4–5 hours, until tender and shreddable.

4. Shred: Remove pork, shred with two forks, and return to the slow cooker with the juices. Add more BBQ sauce if desired.

5. Assemble the sandwiches: Toast buns lightly.

6. Pile with warm pulled pork and spoon a generous amount of Chow Chow over the top.

7. Serve hot with chips, fries, corn on the cob, or a fresh salad.
