Honey Dijon Roasted Carrots

Sweet, savory, and caramelized to perfection, these roasted carrots combine rich honey with zesty Dijon mustard for an easy, elegant side dish. Perfect alongside chicken, pork, ham, or holiday meals.

INGREDIENTS

2 lbs carrots, peeled and cut into sticks or left whole if thin
2 Tbsp Dijon mustard
2 Tbsp honey
2 Tbsp Olive Basin Garlic or Rosemary Olive Oil (optional upgrade)
1 tsp salt
½ tsp black pepper
Fresh parsley for garnish (optional)

INSTRUCTIONS

1. Preheat oven: Set oven to 400°F. Line a baking sheet with parchment paper.

2. Make the glaze: In a bowl, whisk together Dijon mustard, honey, olive oil, salt, and pepper.

3. Coat the carrots: Add carrots to the bowl and toss to coat thoroughly.

4. Roast: Spread onto the baking sheet in a single layer. Roast 22–28 minutes, flipping halfway, until tender and caramelized.

5. Finish: Transfer to a serving dish and garnish with fresh parsley if desired.

6. Serve warm with chicken, pork, or holiday entrées.

Creamy Dijon Salad Dressing

A smooth, tangy, restaurant-style dressing made with Dijon mustard, honey, and vinegar. Perfect for salads, grain bowls, roasted veggies, or as a dipping sauce for chicken.

INGREDIENTS

2 Tbsp Dijon mustard
2 Tbsp honey
¼ cup Olive Basin Champagne, White Balsamic, or Apple Balsamic
¼ cup Olive Basin EVOO (or Lemon Olive Oil for brightness)
2 Tbsp mayonnaise or Greek yogurt

Salt & pepper to taste

INSTRUCTIONS

1. Combine: In a small bowl or jar, whisk together Dijon mustard, honey, vinegar, mayonnaise/Greek yogurt, and olive oil.

2. Season: Add salt and pepper to taste.

3. Adjust consistency: If too thick, add 1–2 tsp water to thin slightly.

4. Chill: Refrigerate 20 minutes before serving for best flavor.

5. Use with: Green salads, grain bowls, chicken, roasted vegetables, or as a dipping sauce.
